Veggie Soup Recipe
1 medium cabbage, cut into quarters
1 small leek, minced
2 tablespoons olive oil
4 large carrots, peeled and finely sliced
2 large celery stalks, finely sliced
2 parsnips, peeled and diced
7 cups of vegetable stock
2 medium Yukon Gold potatoes, peeled and diced
2 zucchinis, diced
2 cups of cauliflower florets
2 fresh tomatoes, seeded and diced
Salt and pepper to taste
Fresh parsley for garnish
Directions: Slice the cabbage quarters into thin strips. Heat the oil in a large soup pan and add the cabbage, carrots, celery, leeks, and parsnips cook over low heat for approximately 10 minutes, stir often so vegetables don’t stick to pan. You can add a tablespoon or so of stock if needed.
Stir in the stock and bring to a boil. Add the potatoes, zucchinis, cauliflower and tomatoes with a little chopped fresh parsley and salt and pepper to taste. Bring back to a boil, cover and reduce heat to low. Simmer for approximately 15 to 20 minutes until the vegetables are tender.
Pour into soup bowls, and garnish with fresh parsley.

Heavenly Angel Cake Recipe
Ingredients:
1 cup sifted flour
1 1/2 cups granulated sugar
1 1/2 cups egg whites
1/4 teaspoon salt
1 teaspoon cream of tartar
3/4 teaspoon pure almond extract
3/4 teaspoon bourbon vanilla
Preheat oven to 375 degrees
Directions: Sift the flour twice into a large bowl. Place sugar in a small bowl. Beat the egg whites until light and airy. Add the cream of tartar and beat until stiff peaks form. Fold in the sugar, no more than 3-4 tablespoons at a time, folding as you add. Do not over mix.
After all the sugar added, start adding the flour, a little bit at a time. Fold in the bourbon vanilla and pure almond extract. Transfer with care to a lightly greased baking pan. Bake for 40 min. or until golden and toothpick inserted off-center comes our clean.
Turn upside down onto a wire rack. Leave baking pan on until completely cooled.

Simply Swirled Christmas Brownies

1/ teaspoon pure bourbon vanilla extract
1/8 cup heavy cream
1 package of cream cheese
1/3 cup sugar
1 bag holiday M&M's
Directions: In large mixing bowl, cream the sugar & cream cheese, until fluffy. Add egg, heavy cream, and pure vanilla extract. Mix well, and set aside.
Prepare the brownie mix according to package. Line a 13x9 baking pan with wax paper, and then pourl 2/3 of the batter into the pan. Place ½ cup of the M&Ms over the brownie batter. Then spoon the sugar mixture over the M&Ms and batter. Finally, scoop the remaining brownie mixture over that. Using the tip of a knife swirl the mixture for a marbled effect.
Bake for approximately 45 minutes at 350 degrees, or until baked through but still moist (do not overbake). Cool before cutting into squares.

Fun Halloween Party Food Ideas
Getting ready for a howling Halloween party this year? Spruce up your party this year with some icky, but yummy party food.
Here are some fun food ideas for your ghostly Halloween party:
Snot cubes
Refrigerate yellow and green Jello (any flavors) in ice cube trays. Serve chilled.
Worms in snotMake snot cubes, as directed above, out of Jello. Insert gummy worms in each cube of Jello then refrigerate. Serve chilled.
Bad apples
Using a small, sharp knife cut a small, round hole in one side of the top of an apple. Insert a gummy worm inside the hole. Create display of “bad apples” in a wooden bucket.
Monster Mash
In a large bowl, combine the following ingredients:
* 10 cups popcorn * 1 pound plain M&M’s * 1-14 oz. jar dry roasted peanuts * 1 cup raisins (optional)* 1 cup Reece’s pieces (found in baking isle by chocolate chips)
Bowl of Brains
Scramble several eggs. To get the gray brain color, mix in green, red, and blue food coloring as you beat the eggs before cooking them.
Buggy Ice Cubes
Insert gummy worms or raisins (for bugs) in ice trays with water and freeze. Insert frozen buggy ice cubes in your bowl of party punch.

Mix an envelope of your favorite salad dressing with 16 ounces of sour cream, and one or more of the following; 8 oz. can/jar of chopped artichoke hearts (drained), 1 tsp. roasted garlic, small jar of roasted red peppers (drained), cooked and drained spinache, or chopped sun dried
tomatoes.

Creamy Chicken Soup
4 chicken thigh fillets (cut into small chunks)
4 cups chicken broth (homemade, stock cubes, or canned broth)
1 small onion (finely chopped)
1 clove garlic (crushed)
2 medium carrots (roughly chopped)
2 stalks celery (finely chopped)
1 small can corn
1 cup pasta shells (or any small pasta you have)
1 cup cream
Heat oil in large pan. Add onion and garlic and cook for about 2 minutes on low heat (until onions are soft). Add chicken, carrot, corn and stock and bring to a boil. Cover and simmer on low heat for about 20 minutes. Add pasta and simmer uncovered for about 10 minutes or until pasta is tender. Stir in cream and heat through without boiling.
