Here's a quick dip recipe in case you ever get in a pinch...

Quick Dip
Mix an envelope of your favorite salad dressing with 16 ounces of sour cream, and one or more of the following; 8 oz. can/jar of chopped artichoke hearts (drained), 1 tsp. roasted garlic, small jar of roasted red peppers (drained), cooked and drained spinache, or chopped sun dried
tomatoes.

Creamy Chicken Soup

4 chicken thigh fillets (cut into small chunks)

4 cups chicken broth (homemade, stock cubes, or canned broth)
1 small onion (finely chopped)
1 clove garlic (crushed)
2 medium carrots (roughly chopped)
2 stalks celery (finely chopped)
1 small can corn
1 cup pasta shells (or any small pasta you have)
1 cup cream

Heat oil in large pan. Add onion and garlic and cook for about 2 minutes on low heat (until onions are soft). Add chicken, carrot, corn and stock and bring to a boil. Cover and simmer on low heat for about 20 minutes. Add pasta and simmer uncovered for about 10 minutes or until pasta is tender. Stir in cream and heat through without boiling.

Breakfast Bagel Casserole

3 plain bagels (thinly sliced)

12 eggs (beaten)
1/2 pound cooked ham (diced)
1/4 cup finely chopped onion
1 tablespoon fresh chopped parsley
1 cup grated cheddar cheese
1 cup milk
Salt and pepper to taste
2 tablespoons butter

Place butter in heavy skillet. Add ham and onion. Sauté over low heat until tender (approximately 2 minutes). Set aside. Slice each bagel into 4 thin slices. Arrange 6 bagel slices at bottom of lightly greased baking dish. Top bagels with ham and onion mixture. Then top with cheddar cheese. Finally top with remaining bagel slices. In a separate bowl whisk together eggs, milk, parsley, and salt and pepper to taste. Pour the egg mixture over the bagel layers. Bake at 375F for approximately 30 minutes or until eggs are firm and cooked through.

Hearty Sirloin Crock Pot Stew

2 pounds sirloin tips (cut into 1-inch cubes)

1 (14oz) can diced tomatoes
1 can beef broth
1 1/2 cup canned or frozen corn kernels
3 medium carrots (sliced)
1 medium onion (sliced)
2 garlic cloves (crushed)
1/2 teaspoon ground cumin
1 bay leaf
Salt and pepper to taste

Combine all ingredients and place in bottom of crock-pot. Cover and cook on low for approximately 8 hours or until beef is tender.

Baked Rice Pudding Recipe

1/2 cup cooked rice

3 eggs (beaten)
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup raisins
3 1/2 cups milk
Ground nutmeg

In a large bowl, mix all ingredients except nutmeg. Pour mixture into a lightly buttered shallow baking dish and sprinkle with nutmeg. Place baking dish in a pan of hot water in oven and Place baking dish in a pan of hot water in oven and bake at 300° for about 1 1/2 hours, or until set.

Cool off with our Cool Cucumber Sandwhich!

For each sandwhich you will need...

2 thick slices whole wheat bread
2 tablespoons cream cheese, softened
6 slices cucumber
2 tablespoons alfalfa sprouts
1 teaspoon olive oil
1 teaspoon red wine vinegar
1 tomato, sliced
1 leaf lettuce
1 ounce pepperoncini, sliced
2 avocados

Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

EASY PINEAPPLE UPSIDE-DOWN CAKE

1 stick butter
2 1/2 c. brown sugar
1 can pineapple slicesMaraschino cherries
1 yellow cake mix

Melt butter in oblong cake pan. Rotate pan spreading melted butter evenly and coating sides of pan. Sprinkle brown sugar in pan and pat down. Arrange pineapple slices on brown sugar. Place cherry in center of each pineapple ring. Mix yellow cake mix as directed, using reserved pineapple juice for water. Pour cake batter over pineapple rings. Bake as directed on cake mix, adding 5 minutes. Test for doneness by inserting toothpick in center of cake. Cool slightly then invert cake onto plate.
